Starting November, aspiring Filipino chefs can take their technical skills and creativity to the next level with Superior Diploma course by Global Academy. This advanced four-month program features modern culinary techniques and builds on the fundamentals of Global Academy’s culinary and baking and pastry arts.
“The culinary industry is continuously evolving,” said Global Academy Superior Diploma program head, Chef Vic Sanchez, “The Superior Diploma is Global Academy’s way of developing more Filipino culinarians to become true masters of their craft.” According to Sanchez, the new curriculum was developed through extensive research, hands-on industry practice and numerous experiments by a team of world-class chefs and experienced food technologists.
The curriculum includes a scientific evaluation of traditional culinary methods; food taste and texture development; the use of hydrocolloids as thickening and gelling agents; and sous vide, French for “under vacuum”, which refers to the method of precision temperature cooking with the use of sealed airtight bags immersed in water. The course will also touch upon various cuisines including Filipino, Japanese, Chinese, Southeast Asian, Korean, Thai, Middle Eastern, French, Spanish, Greek, Italian and American.
Modern cooking uses state-of-the-art equipment to prepare dishes of the highest quality. Each month, the program will be accompanied by an event simulation such as a cocktail party, buffet spread, restaurant simulation and a degustation dinner. These simulations allow students to showcase their skills and gain hands-on experience in a variety of settings.
Recently claiming the gold award for the Sous Vide category at the 2013 Philippine Culinary Cup, Global Academy aims to share their expertise to aspiring chefs. “Although the course is currently only open to those who have attained Global Academy’s Grand Diploma, we intend to open the advanced course to the rest for the next batch,” said Global Academy co-founder, chief financial officer and president, Chef Benny Ledesma, Jr.
