as the Spiral Master Chefs present colorful and nutritious specialties, treating mom to a sumptuous journey of taste. Spiral takes you to the households of Gretchen and Hidilyn in a sensory voyage on inspirations by their moms as they push their limits to be celebrated personalities and winners.
GRETCHEN HO
Volleyball player and television host Gretchen Ho is the only girl of four siblings and was raised in a tight-knit family. Growing up with sports-oriented brothers, athletic father and supportive mother, she developed her love for basketball and volleyball during her grade school years. She joined the volleyball varsity team of Immaculate Concepcion Academy in fifth grade, continuing on to high school and became the captain in her senior year. Gretchen gained nationwide fame during her university varsity stint in the University Athletic Association of the Philippines (UAAP), playing for the Ateneo Lady Eagles. Gretchen’s mom, Annie, made sure she trains for volleyball and maintain good grades in school while also taking care of her three brothers and managing the household together with their dad, James. Her mom’s passion and unconditional love for the family inspired Gretchen to perform well in school and her sport, being one of the Lady Eagles’ “Fab Five” star players.
Gretchen values family time, celebrating important occasions together and frequently going on trips to travel and embark on adventures. Currently hosting morning shows, events and her own primetime news segment, she still makes time to go to the gym to keep in shape and maintains a healthy lifestyle. Gretchen is on a low carbohydrate, high protein diet, eating mostly chicken, fish, fruit and egg. She loves spicy food, eating dishes with chili, sometimes adding chili pepper or flakes to her own dish.
HIDILYN DIAZ
Olympic silver-medalist and Airwoman First Class Hidilyn Diaz developed her love for weightlifting at the young age of eleven years old after watching her cousin lift weights in the gym. She built up her strength from walking 50 meters to draw water from the community water pump and lifting two big buckets of water. In 2013, she was recruited into the Philippine Air Force (PAF) through the military
arm’s Direct Enlistment Program and was given an Air Force Specialty Code skill in recreation in weightlifting. Hidilyn is the first Filipina weightlifter to compete in three consecutive Olympics (Beijing 2008, London 2012, Rio 2016) and the first Filipino woman to win an Olympic medal. She dedicated her Rio win to her mom, Emelita, giving the medal to her as a birthday gift when she came home to Manila. Hidilyn grew up close to her mother as they humbly lived in Zamboanga City with Hidilyn pursuing her weightlifting career. The Diaz family made sure they commemorate every important occasion like birthdays and graduations through simple but special celebrations.
Hidilyn follows a strict and meticulous diet rich in protein, especially fish which is her favorite.
The Spiral Master Chefs are offering their recipes for a healthy lifestyle in honor of all Mothers starting with a Detox Bar and the French style Verrine Detox and a special sushi bar. As a collaborative effort with the athletic celebrities, Spiral Master Chefs came up with an interesting line up of healthy dishes.
Spiral’s Japanese Chef proposes a selection of fresh makis namely Toro Taku Maki Roll, Rainbow Maki Roll and Cactus Maki Roll for Hidilyn’s Olympian high protein diet. From Spiral’s French Stove, the culinary masters present a colorful salad of edible flowers, asparagus, quinoa pomegranate, calamansi and vinaigrette. The Korean atelier suggests Chicken Ginseng Soup as ginseng boosts energy needed for her rigorous workouts. Hidilyn as a national icon, the Chinese Chef will prepare Lapu-Lapu, steamed in Brown Bean Sauce. For Gretchen who loves everything spicy, the Chefs suggest the Avocado Prawn with Wasabi De-light Mayonnaise, Thai Chicken Green Curry while the Chinese Chef will serve Braised Chicken with Black Mushrooms and Fresh Ginseng. And for meals shared with family, our French master chefs present the tasty yet healthy Spring Chicken Tagine. Gretchen and Hidilyn love guilt-free desserts and may enjoy the featured selection of Mix Berry Panacotta, White Chocolate Green Tea Entrements and Sugar-free desserts – Banana Hazelnut Torte and Chocolate and Coffee Pot de Crème.
The Japanese atelier will also offer Tonjiru Miso Soup, Nikomi Hamburg and Kaisen kaminabe. The French stove will feature Cod Fish in a Seaweed Lemon Butter Sauce, Polenta Black Olives, Cèpes Mushroom and Spinach Orecchiette Pasta, Scallop and Herb Piperade, Cumin Carrot and Einkorn Risotto and Mediterranean Ratatouille. The Wood-Fire Oven Atelier offers Cèpes Mushroom Pizza and Chocolate calzone pizza. Other delectable healthy dishes include the Korean Spicy Squid, Indian Green Peas Paratha (flatbread), Paneer Bhurjee (crumbled paneer cheese), Dahi Bhindi (spice curd okra) and Tawa Jhinga (spicy prawn curry). The Chinese atelier will have Fried Dim Sum Shrimp with Almond, Steamed Dim Sum Crunchy Vegetable Dumpling and Stuffed Eggplant with Shrimp Salt and Pepper.
