Sean Jorgensen, the in-house Chef of the newest high-end bar and restaurant in the central business district of Makati City, Mansion Sports Bar & Lounge, has a clarity of vision that springs from his experiences in his grandmother’s kitchen and his travels around the United States and Asia. Jorgensen takes to his heart the love for straight-froward preparation and the simplicity of fresh ingredients taking it to a more modern-day take.
Chef Sean started cooking at the tender age of 7 when he learned to work on a stool beside his grandmother; from then on, he was already determined to be a chef when he grew up. His talents lead him to a more refined approach, but the core philosophy of cooking he learned from his grandmothers stays the same.
88 Mansion Bar’s best-seller Mansion Roasted Chicken somehow paints a mental picture of a cozy family gathering. Chef Sean’s take on this is smoky-sweet and charred. It tastes so flavorful and juicy that you hardly need the sauce – if you have to, the sauce gives just enough flavor to taste chicken meat’s tastiness. It will be a complete course with an extensive selection of alcohol – craft beers, wines, and cocktails.
Quenching the hunger with more food at the Mansion
The tight menu features exciting twists on classic American and Asian cuisine. First in the course is the Chicken Liver Toast with crispy bacon, shimenji mushrooms, and pickled grapes topped with black pepper onion jam. After the mouth-watering white meat, we tasted the Tuna Tartare with doubanjing aioli, crisp nori, and the sweetness of mango on top. Lastly, their Charred Broccoli with shaved carrot, radish, quinoa, mint, basil candied peanuts, chicharon, and coriander lime vinaigrette finally completed the course’s maximum flavor.
Perfect Beverage Pairing is a mix of plymouth gin, campari bitter, lemon juice, and house-made drago fruit syrup with a splash of soda water called, “Bad Shot,” which gives you a taste of strawberry and pear with lush tropical flavor.
Our 2nd course is Asian cuisine; best for those craving to taste its street-style food is the Mansion’s Asia Street-Style Prawn Noodles cooked with egg noodles, and its bevy of accompaniments includes sichuan sausage, ginger, egg noodles, garlic, dark soy, and bok choy. Best partnered with their famous drink, “Slot Me,” mixed with 3-year-old Havana Club, lime juice, and buko pandan syrup topped with Cola and garnished with toasted coconut, cinnamon powder, and pandan leaves.
The standout is the main course, Bavette Steak, an Australian M3 Angus beef banished with black pepper garlic sauce served with Eyes in the Sky drink, which gives a refreshing Cazadores Reposado, Aperol infused hazelnut syrup, lime juice, fresh pineapple, and agave syrup served with dried pineapple flower and pink Himalayan salt.
We tried the Trifle dessert with calamansi curd, lemon sponge, blueberry compote, and toasted coconut for one last surprise. You’d never guess it, but it is best paired with the Mansion’s cocktail, The High Roller, a perfect digestif drink concocted with Dewards 12, Frangelico hazelnut liqueur, and fernet branca, an Italian bitter herbal liqueur stirred and served on the rocks.
Its stylish yet modern interior features different halls, and two private rooms, giving a more effective way to hold group gatherings and celebrations.
