Marriott Manila launches Famsgiving Thursday

Marriott Hotel Manila means to bridge and continue important and heartwarming family traditions which create those winning moments with the launch of “Famsgiving Thursday” on April 20, 2023, a dining experience featuring select Filipino heirloom recipes of relatives of Manila Marriott Hotel’s very own chefs led by Executive Chef Meik Brammer.

Traditions in some aspects are gradually perishing for individuals tend to cease its practice. Filipinos, on the other hand, continue to value the importance of strong family ties and principles including passing down of family recipes from one generation to another because a family dish represents the appreciation and gratitude of a clan to the invaluable union and rich heritage cascaded by their predecessors.

Because a simple “thank you” isn’t enough, Famsgiving Thursday aims to make families, and those considered as family, enjoy a feast of heirloom recipes celebrating Filipino cuisine and thanksgiving. Manila Marriott Hotel offers various Filipino cuisines from several regions of the country for everyone to try and enjoy.

Famsgiving Thursday is available every Thursday in Marriott Café from May to December 2023 from 6 p.m. to 9 p.m. for only P3,700 nett per person.

Chef Derequito and Mom Merlie Martinez

Dinuguan De Aklan

An heirloom recipe of Chef Fem Derequito, Commis II’s mother, Merlie Martinez, their very own Dinuguan De Aklan dish. A Boldy-flavored stew which is popularized in the Philippines. Dinuguan is made out of pork blood, cube size cut of pork, spices, vinegar, and brown sugar to balance its taste!

Lumpiang Sariwa ng Rizal

Taking the ordinary lumpia to the next level! Chef Earl Jacinto with his mother-in-law, Blesilda Besin, present their Lumpiang Sariwa ng Rizal. This dish is one of the healthiest and go-to snacks of the Filipinos. Lumpiang Sariwa is composed of sauteed vegetables, tofu, and pork which are then wrapped with crepe wrappers. A sauce made from the mixture of soy sauce, brown sugar, garlic and chili will make this dish a little bit more extra!

Minanok na Talong

Eggplant turned into a flavorful and appetizing dish by Chef Paul Alarcon with wife Christine Alarcon. Instead of chicken, eggplant served as the star of this Minanok na Talong cuisine. A creamy eggplant dish that is prepared with coconut milk and a mixture of vinegar, salt, and onion to balance both the sweetness and sourness of the dish. Their respective families have been passing down the recipe of Minanok na Talong from one generation to another.

Pinakbet

One of the renowned Filipino dishes in the world is Pinakbet, a cuisine composed of nutritious vegetables such as squash, tomato, okra, beans, and ampalaya. And to make this more flavorful, shrimp paste is mixed in together with the hint of protein. Chef Oscar Gutay, and his adoring mother, Irene Gutay, elevated this simple dish using their family recipe.

Pork Kilawing Labanos

A family heirloom recipe of Pork Kilawing Labanos shared by Chef Alvin Valino – Chef De Partie – and Aunt Emma Gatchalian. Pork Kilawing Labanos is a Filipino cuisine with a kick of acidity, wherein the thin sliced labanos, pork and pork liver are marinated together with vinegar to attain that sour taste.

Pork Pochero De Alfonso

For generations, Pork Pochero De Alfonso has been prepared and served in the Varias Family. Chef Jenny Varias together with her mom, Annalie Varias, presented this dish and gave Manila Marriott Hotel’s diner a chance to have a taste of their exquisite dish. Pork Pochero De Alfonso is as tasty as it looks since it is composed of various ingredients such as pork, saba, cauliflower, red bell peppers, and it is mixed with tomato sauce.

Sinampalukang Kambing ng La Union

Been wanting to experience La Union? Chef De Partie, Chef Eduard Agas and his uncle, RC Garcia, present you a dish that would let you experience and have a taste of La Union’s cuisine! Here to set forth their family’s Sinampalikang Kambing ng La Union. Sinigang is not just the only mouthwatering dish in the country, but also the Sinampalukang Kambing ng La Union! It consists of tamarind, and goat meat as its main protein.

Sinuglaw Pork and Fish

Chef Allan Dan Dan together with his loving wife, Annalisa Dan Dan presents a dish prepared delicately with love, the Sinuglaw Pork and Fish! This dish is composed of both chopped grilled pork belly and fish which are marinated with vinegar to give it a sour taste. It is also cooked together with cucumber, red onions, ginger, chili, and lemon to make it more flavorful!

Siquijor Style Chicken Mataar

Siquijor Style Chicken Mataar, a dish worth a try! Chef Sydney Arboladura, continues to serve this fine cuisine with his mother, Eleanor Arboladura. A creamy chicken dish cooked with Filipino spices, red bell pepper, carrots and such.

Spicy Ginataang Native na Manok ng Bicol Region

Don’t miss the chance to have a taste of this exquisite dish freshly prepared in accordance with the recipe of Chef Rickson Alcantara, and his wife Jing Alcantara. The Spicy Ginataang Native na Manok ng Bicol Region has been served by the family for generations. A creamy dish prepared by using coconut milk to attain the consistency of the sauce. The native chicken is sauteed which then stewed with coconut milk and to add a kick of spice, chili is added.
