Araneta City welcomes 18 Jade, the latest dining concept at World Kitchens, where authentic Chinese cuisine is presented with a refined and thoughtful approach–meant not only to be tasted, but enjoyed as a complete dining experience.

The newest show kitchen at Gateway Mall 2‘s growing dining destination reflects its culinary philosophy, both in name and in menu. In Chinese culture, the number 18 is associated with prosperity and good fortune, while jade is valued for its beauty, purity, and lasting worth.

These ideas guide the show kitchen led by Chef Zhouping Liang, whose cooking balances deep respect for tradition with careful, modern execution. Drawing from years of professional training and culinary experience in Singapore, he brings a strong foundation in Chinese cuisine to 18 Jade. His dishes emphasize balance in flavor and texture, using premium ingredients prepared with precision and restraint.

One of the restaurant’s signature offerings is the Dry-Aged Peking Duck Two Way, a classic Chinese specialty recognized among Singapore’s best. The duck is marinated with a delicate blend of sugar, wine, and water to achieve tender meat and crisp, golden skin, then dry-aged for a week before being cooked using custom-designed equipment that ensures consistency and control. 18 Jade’s menu also features shark’s fin, along with a selection of premium seafood and wok-fried dishes, each prepared using time-honored Chinese cooking methods. Precise timing and meticulous technique ensure that every dish is served at its best.

18 Jade further enhances the dining experience with personalized menus for guests of distinction, offering a tailored approach suited for intimate gatherings and special occasions. It also features a custom cart that enables tableside carving and the serving of hot dishes straight to diners, highlighting both preparation and presentation.
