Chef Sandy Daza’s first quest takes him to the northernmost tip of Luzon, landing him in Laoag, Ilocos Norte. Join him as he goes straight to the best places to get to know a region’s food culture, setting himself right in the middle of the hubbub of the busy Laoag Sunday market. There, he familiarizes himself with the tastes and cravings of the Ilocano people—taking on the famous Ilocos empanada, bagnet with KBL (kamatis, bagoong Balayan and lasona), and pinakbet. He even goes into the debate between Batac and Laoag longganisa, and visits the man who is known to have revolutionized Ilocano cuisine.
