Crowne Plaza Manila Galleria’s culinary team once again bagged major awards at the Philippine Culinary Cup 2016 last August 3-6 held at the SMX Convention Center.
Various challenges in both individual and group categories were participated by professional and culinary students across the country. Representing Crowne Plaza Manila Galleria, are Ultimate Chef Warriors, Chefs Manuel Abogado, Christopher John (CJ) Sanchez, and Jude Enierga; joined by neophytes Jan Olaño and Giovanni Olhon.
Crowne Plaza Manila Galleria bagged the gold medal for their exemplary execution in the Dream Team Challenge which was a three-course menu (using foie gras in appetizer, Iberico belly for the main course, and chocolate for dessert) for 3 persons to be prepared within 120 minutes. The team of Chefs Manuel, CJ, Jude, and Jan prepared Terrine de Foie Gras and Medley of Fruits on Sauce Framboise; Chorizo Glazed Pork Screto with Red Cabbage and Pork Skin in Honey and Red Wine; and Chocolate Duo composed of No-bake White Chocolate and Wild Berry Cheesecake, and Hazelnut Dark Chocolate Mousse Served with Green Goddess Sauce.
In the individual categories, Chef Manuel’s entry in Quick-Fire Salad: Market Basket Style received bronze for his excellent dish Prawn with Melted Cheese on Green Mango Puree Salad. Consequently, the first timer but equally talented Chef Giovanni bagged the bronze medal for the Plated Dessert category. His Cheesecake Novu with Blueberry Compote Filling and Medley of Wild Fresh Berries; Tiramisu Dark and Brown Chocolate layered with Cream Cheese Mousse; Chocolate Cake, White Chocolate Mousse in Dark Chocolate Glaze; and Salted Caramel Cake in Dark Chocolate Shell, Chocolate Volcano and Praline de Caramel left the jurors in awe of the presentation.
